Vegetable Pad Thai

This Pad Thai is simply delicious and the perfect dish if you’re craving an Asian style, noodle-free meal.

The zucchini noodles are the perfect substitute for wheat noodles.

Coconut Aminos (Coconut SecretTM) is a soy-free, gluten-free ‘soy sauce’ made with coconut and is available on-line and at most health food stores.

Serves 2 to 4

Equipment needed: Spirooli or vegetable peeler


2 large organic zucchini, made into noodles

1 organic carrot, cut into thin julienne strips

2 organic green onions, trimmed and sliced thinly on the diagonal

½ organic red a pepper, cut into thin julienne

¼ cup organic basil, cut into thin strips

2 Tbs. crushed organic almonds

Basil and cilantro for garnish

Vegetable Pad Thai


Juice of ½ an organic lime

3 Tbs. Coconut Aminos

½ tsp. toasted sesame oil

2 tsp. agave

1 Tbs. finely grated organic ginger

1 large clove organic garlic, finely minced

Chipotle or cayenne pepper to taste

3 Tbs. organic almond butter

3 Tbs. purified water


1. In a large mixing bowl, add zucchini noodles. In a separate bowl, add remaining vegetables and set aside.
2. In a small mixing bowl, combine sauce ingredients and whisk together.
3. Pour half the sauce over zucchini noodles and toss well to evenly coat. Toss in remaining vegetables and pour in remaining sauce and toss again.
4. Add Pad Thai to a decorative serving bowl. Toss in crushed almonds and a sprinkle of basil and cilantro for garnish. Serve immediately or refrigerate until ready to serve.
